CHILLI CON CARNE

Fancy a little bit of something mexican?Big fan of hot & spicy?
I'm gonna share one of my favourite recipes with you!Recipe for ''bowl of red''.
Trust me!It's absolutely deliciouuuuus!



INGREDIENTS:

2 tbsp olive or rapeseed oil
1 large onion, chopped
2 cloves garlic, chopped
2 chillies (red or green - of course you can add less or more), deseeded and chopped
2 tbsp kumin
2 tbsp dried oregano
500 g mince beef
2 x can of chopped tomatos
5 tbsp tomato puree
1 red pepper, deseeded and diced
1 x tin of red kidney beans in water, drained and rinsed
salt
black pepper

Additionally:

200g basmati rice
Lemon or lime wedges
Chopped parsley



1. Heat the oil in a large, dipp, lidded pan.Add the onions and garlic, and cook for 2-3 minutes.Add kumin, dried oregano and chillies.Fry together for 1 minute.

2.Add the mince and cook until brown, stirring well.

3.Add chopped tomatos,tomato puree, bring to boil, stirring,then reduce the heat to a simmer.Cover and cook gently for 20 minutes.

4.Add chopped red pepper.Cover for another 10 minutes.

5.Finally add red kidney beans.Cover again and cook for a further 5 minutes.Season with salt and black pepper.

Meanwhile, cook the rice following the pack instructions.
Serve the chilli with rice and lemon wedges. Sprinkle some chopped parsley on top.
